Joe, as the creator of milk, curds, rennet, bacteria, and all things turophilic, it is difficult for Me to select just one favorite cheese. But for now I will put forth Swiss, because, from My point of view, it looks like the macrocosmos.

Oh so so many! But Pearl Las Blue and Golden Cenarth are good contenders. Always like a bit of strong cheddar too.
